When we were in Disney World, just a couple of weeks before the world fell apart, I was the MOST excited for one attraction: the Happily Ever After Fireworks at Magic Kingdom. Without spoiling anything, it takes place every night when a 20+ minute animated montage is projected onto Cinderella Castle while fireworks roar behind it.
It's truly spectacular. I insisted we see twice on our trip, regardless of anything else we did. During one of the evenings while we waited for the show to begin, I enjoyed this Minnie's Sweets Sugar Rainbow Rice Cereal Treat that I had picked up on a whim while souvenir shopping at the Emporium on Main Street.
To my surprise and delight, it wasn't just any Rice Krispies treat; it was a Rice Krispies treat that was laced with a hint of Fruity Pebbles. I mean, what could be better than that?
I've wanted to recreate these treats since we came home, and this weekend, I came up with a version that could easily rival the original in taste.
I wanted them to be:
Soft
Gooey (not dry!)
Just a hint of Fruity Pebbles
Coated in soft white chocolate, but not a hard shell
Sprinkles are fun, but I let the Fruity Pebbles do the heavy lifting because they were just too pretty as is
I added extra butter and marshmallows, which made them extra soft and gooey, and stayed that way for a few days. Then, I drizzled white chocolate ganache on top and sprinkled flaky salt all over to keep them from getting too sweet. I love the original Mickey-shaped treat, but these were super simple and even softer as bars. I highly recommend!
Fruity Pebble Rice Krispies Treats Disney Copycat Recipe
Ingredients
- 4 C Rice Krispies
- 2 C Fruity Pebbles
- 8 Tbsp butter
- 15 oz. mini marshmallows, divided (about 1 1/2 bags)
- 1 1/2 tsp kosher salt, divided
- 1 C white chocolate chips
- 1 Tbsp heavy cream
Instructions
- Prepare a 13x9" baking dish; line with parchment paper (with some overhang)
- Combine Rice Krispies and Fruity Pebbles in a bowl.
- In a sauce pan over medium-low heat, melt the butter.
- Once melted, swirl the pan consistently over the heat until it turns golden brown, about 3-5 minutes. Do not walk away from the pan at this point, as the butter can go from brown to burnt in a matter of moments.
- Once the butter is browned, turn down the heat and stir in the marshmallows, reserving about 1/2 cup of marshmallows on the side for later. Add 1 tsp salt, and mix until the marshmallows are just about melted.
- Quickly stir the marshmallow mixture into the cereal until combined. Press into prepared pan.
- Let the treats sit at room temp until set, about 1 hour.
- Place white chocolate chips and heavy cream in a microwave safe bowl and microwave at 30 second increments until melted, stirring in between each interval.
- When treats have set, drizzle the white chocolate on top and sprinkle with 1/4-1/2 tsp
- Let set completely and cut into squares.
