How to Make a Veggie Tray

Oh how I love all the boards - cheese boards, charcuterie boards, crudite platters and veggie trays. There’s just something about seeing some many fun options together in one place. And let’s talk about the colors for a moment. Can you even? These vegetables are so gorgeous. And my favorite part? This veggie tray can be customized for your veggies or snacks of choice!
I made this beautiful veggie crudite platter for Penelope's birthday a few months ago and realized it's actually a perfect summer board.
Here's what you'll need:
Colorful veggies (I used carrot chips, bell peppers, tomatoes and cucumbers)
Dips (pictured here are spinach dip and my favorite kalamata olive hummus)
Crackers, if you want, but definitely not needed!
The great thing about a simple crudite platter is that it satisfies basically every dietary requirement. It can be made dairy-free, gluten-free, keto, low carb, paleo...pretty much any way you want it!
To assemble:
I usually place my dips on the crudite platter first, then start filling in the veggies.
If I'm doing a river, I plot that out to weave between the dips.
Then, fill in the rest to spread out and balance the colors of the veggies.
The best part about this veggie tray is that this can also be made ahead, covered tightly with plastic wrap and kept in the refrigerator until it's time to serve.
