Do your kids have bizarre eating habits like mine? Some days I'm positive that Penelope has done nothing but eat all day long. Other days, I'm convinced the child is going to starve because I can't recall the last meal I fed her that she actually ate.
One of my fail-proof dishes for her is caprese salad, or as she likes to call it: cheese and tomato and sauce {sauce meaning balsamic glaze}. Not only is this a guaranteed meal for her, but she will eat so much that I finally need to stop her for fear she'll be ill with a cheese-induced belly ache. We spend many weekend evenings snacking on a plate of tomato and mozz, drizzled with a healthy dose of balsamic glaze.
A few weeks back, I wanted to take our usual tomato and mozz up a level to serve a crowd and I came upon this recipe which gave me a great basis for a crowd-friendly caprese.
Also can I tell you a secret? It's so easy. Like one of the easiest dishes I've ever made but also looks like one of the most impressive and beautiful. If that's not the way cooking should be done, then clearly I know nothing.
Caprese Salad for a Crowd
Ingredients
- 1 large bag baby spinach
- 3 C fresh mozzarella pearls
- 2 C grape tomatoes, sliced lengthwise
- olive oil, for drizzling
- salt & pepper
- fresh or dried basil
- balsamic glaze or other Italian dressing of your choice
Instructions
- Layer the baby spinach leaves in the bottom of a large platter.
- Drizzle with olive oil, salt & pepper.
- Drain the mozzarella pearls and slice the tomatoes.
- Add the tomatoes and mozzarella in long layers across the salad, as pictured above.
- Drizzle with olive oil, sprinkle with salt and pepper and basil.
- Serve with balsamic glaze drizzled on top, or with an Italian-style dressing of your choice.
