We have been so insanely busy lately. Can you relate? Between work, school, kids activities, personal projects, exercise and mental health time, this is a crazy season of life. Though Shaun and I both currently work from home, our mornings are still just as busy as ever. The morning rush can be so stressful and a lot of times, I somehow forget to eat breakfast. I would never forget to drink my morning coffee, but breakfast? If it’s not a convenient, grab and go option, it usually just doesn’t happen.

Enter these easy egg muffins.

I love the idea of easy egg muffins for breakfast. These can be made ahead, stored in the refrigerator and then reheated throughout the week. And, I love that this is a totally customizable breakfast option so it can be changed up for different flavors and tastes.

These egg muffins stay nice and moist and reheated in the microwave beautifully.

Easy Egg Muffins

These easy egg muffins are the perfect healthy breakfast! Egg muffins are a great make ahead breakfast idea for busy mornings on the go.

Ingredients

  • 4-6 slices cooked or sliced ham, cooked bacon, Canadian bacon or breakfast sausage, cut or sliced into small pieces
  • 1/2 cup shredded sharp cheddar cheese
  • 6 eggs
  • 1/2 cup milk
  • 1/4 tsp seasoning salt (or more to taste)
  • 1/2 tsp dried parsley
  • black pepper
  • cooking spray

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, whisk together the eggs and milk until fluffy.
  3. Add in the seasoning salt, parsley and pepper and whisk to combine.
  4. Spray a 12-cup muffin tin with cooking spray.
  5. Divide the protein (if using) between the cups.
  6. Pour the egg mixture over the protein, dividing between all cups.
  7. Top with shredded cheddar cheese.
  8. Bake for 15-20 minutes or until puffed up and the tops are cooked through.
