Fudgy Halloween Oreo Brownie Bars

These fudgy Halloween Oreo brownie bars are the cutest and most delicious dessert of the season. They are packed with chocolate, stuffed with Halloween Oreos, topped with a silky chocolate glaze and sprinkled with spooky sprinkles. I don’t know about you, but I look forward to Target’s Halloween, fall and holiday sections every single year. I never know what fun and exciting things I’ll find there. Spooky sprinkles. Pumpkin Spice Goldfish. Scarecrow Crunch Trail Mix. And of course, I can’t get enough of the spooky sprinkles. When I spotted these, I scooped up 2 tubs and got brainstorming on what I could make with them. Rice Krispies Treats. Cupcakes. Brownies.

I’ve been testing brownie recipes for a while, always in search of that perfect, fudgy brownie. The one that is simple to make, can be made from ingredients often on hand, and is super fudgy, chocolatey and delicious. And while I was at it…since it’s Halloween, and I picked up these fun Halloween Oreos, I figure why not stuff them for a little surprise.

These fudgy Halloween Oreo brownie bars did not last long in my house. My kids insisted on cutting into them even before they were glazed and sprinkled (and photographed). They oooh’ed and aaah’ed when I cut into them to reveal a sweet, orange surprise in the middle. I love to surprise and delight with anything I bake, and these really delivered.

I decided to add a simple chocolate glaze to these so that the sprinkles would easily stick and look uniform. It’s not necessary to make the glaze, however, for aesthetics, I do think it’s worth it! Look at this guy!

Oh and did I mention that they are super easy? They require one bowl and basic ingredients that I always keep in my pantry. This recipe is so simple yet looks showstopping. To me, that is the perfect package.

Ingredients for Fudgy Halloween Oreo Brownie Bars

Flour. Simple, basic flour lightly measured

Cocoa Powder. The everyday stuff. You can use Dutch process if you want, but it’s not necessary. I used the cheap stuff and it was super chocolatey. This goes into the brownies AND into the glaze!

Sugar. Classic white granulated sugar will do.

Salt. To balance out the sweetness and the richness of these fudgy brownies, you’re going to want a full teaspoon of kosher salt.

Eggs. Only 2 eggs here so these brownies stay fudgy and not cakelike. More eggs equal more cake.

Vanilla extract. You can never have too much vanilla extract. It’s always a good idea. Sometimes, I don’t even measure.

Butter. A lot of butter in this recipe to keep these gooey and fudgy.

Halloween Oreos. 16 Oreos are the perfect amount for an 8x8” pan.

Confectioners’ sugar. You’ll need this for the glaze on top.

How to Make Fudgy Halloween Oreo Brownie Bars:

Gather your ingredients.

Melt the butter. Toss the butter into a small saucepan and melt over medium-low heat, swirling every now and again. Or, you can melt in the microwave-safe bowl, heating in 20 second increments. But, I find it easier to just use the saucepan.

Place dry ingredients in a mixing bowl. Add flour, cocoa powder, sugar, salt and gently stir together.

Add eggs and vanilla extract into the dry ingredients and gently stir together.

Pour in the melted butter. Mix by hand - my favorite part about this recipe! - until completely combined. Set aside while you prepare the pan.

Grab your 8x8” pan and line it with aluminum foil. Spray thoroughly with nonstick spray.

Spread half of the brownie batter evenly into the bottom of the pan.

Add your Halloween Oreos! On top of the brownie batter, place 16 Oreos evenly in the pan.

Top with the remaining brownie batter. Spread the second half of the brownie batter across the Oreos, filling in all the gaps.

Time to bake! Put the brownies into a 350 degree oven for 27 - 33 minutes, or until the brownies are mostly set. For me, 25 minutes was too short, and 35 was just a littttle too long. Somewhere in the middle is right. Take them out when they are the right amount of doneness for you. I prefer them just a little underbaked.

Let the brownies cool completely and make the glaze!

How to Make the Chocolate Brownie Glaze

Grab a small mixing bowl.

Whisk together the confectioners’ sugar and cocoa powder.

Add 4 - 5 tsp very hot water. Like very hot.

Whisk until smooth and drizzly. If it’s too thick, add a splash more water. If it’s too thin, add a tsp more confectioners’ sugar.

Pour over the cooled brownies. Spread very thin. Top with sprinkles, placing the eyes to be all spooky and cute.

Let them set up completely. Let the glaze harden slightly. Then, you can finally dig in.

Cut into squares - whatever size feels right to you. I cut some large, some small. It’s a personal choice.
