Easy Lucky Charms Treats

These easy Lucky Charms Treats are a fun way to celebrate St. Patrick’s Day!

What is it about holidays now that just make me want to indulge and celebrate? I’m not alone here, right?Are we Irish? Maybe a little. But on St. Patrick’s Day, it doesn’t really matter because everyone is Irish. The kids are planning to set leprechaun traps and expecting gold coins to be delivered at the end of a rainbow on March 17.

And really, who am I to protest? Is it over the top?

Yes. It is.

Do we all need reasons to celebrate?

Yes. We do.

So this weekend we made all of the St. Patrick’s Day treats. Shaun picked up a corned beef. The kids and I made the best Irish soda bread recipe. And of course, we had to make some Lucky Charms bars with a mix of Lucky Charms and Rice Krispies for the ultimate Lucky Charms Rice Krispies Treats.

Last St. Patrick’s Day, I quickly threw together Lucky Charms and marshmallows for an easy treat. But this year, I perfected the recipe, combining both cereals for a better texture. We also set aside some of the Lucky Charms marshmallows to strategically place on top so that they would look good enough to eat.

Lucky Charms Rice Krispies Treats

Ingredients:

  • 3 C Lucky Charms

  • 3 C Rice Krispies

  • 1 C Lucky Charms marshmallows (picked out of the cereal box and set aside)

  • 1/2 C unsalted butter

  • 1 10oz. bag mini marshmallows

  • 1 tsp kosher salt

  • Bonus: You can also add another 1/2C mini marshmallows to mix in at the end for extra gooeyness

Instructions:

  1. Add the butter and salt to a saucepan and completely melt the butter.

  2. Continue cooking the butter, gently swirling the pan every few seconds, until the butter becomes golden brown.

  3. Immediately turn off the heat and stir in the mini marshmallows until they are completely melted into the browned butter.

  4. In a large mixing bowl, combine the Lucky Charms, Rice Krispies and butter-marshmallow mixture. Stir until evenly combined. Add the 1/2 C mini marshmallows and gently stir in.

  5. Press into a parchment-lined 13”x9” baking dish or pan.

  6. Dot the reserved Lucky Charms marshmallows all over the top of the treats and gently press them down so they stick.

  7. Let cool completely. Cut into squares and enjoy.
