I absolutely love Mickey-shaped food. Why is it that anything Mickey-shaped is automatically elevated by 100%? Some of my favorite Disney snacks include: Mickey ice cream sandwich, Mickey ice cream bar, Mickey pretzel, Mickey waffle…and yes, the Mickey Rice Krispies Treat!

One of my favorite memories from our 2020 Disney World vacation (yes, about 2 weeks before lockdown started), was standing in front of Cinderella castle, watching the Happily Ever After fireworks show with my babies, and devouring a white chocolate and sprinkle covered Mickey Rice Krispies treat. I had purchased it on a whim from the Emporium while loading up my souvenir basket, and just like so many Disney magic memories, it became a low-key standout moment of our vacation for me.

After our 2020 trip, during lockdown and looking for items to bake, I recreated the Fruity Pebbles treat that I enjoyed that night at Magic Kingdom…but I did not quite go all the way. Instead, I made a treat inspired by that Mickey treat and you can find that recipe here.

I have seen so many Mickey Rice Krispies treats posted on instagram lately, and of course, I’m missing the parks like crazy. I decided that it was time to make my own Disney copycat recipe at home. These were very fun to make…and even more fun to eat. You’ll need a Mickey cookie cutter for this project, as well as candy melts, lollipop sticks (if desired) and, of course, lots of sprinkles. Penelope was a big help in dipping the Mickey treats and decorating them. These are fun on a stick, but also just as adorable and easy to eat without the lollipop stick.
